Ham and Cheese Fritters

Fritters are just about the easiest thing in the world to make and a great way of using up those left overs in the fridge. With about 5 minutes preparation and around 15 minutes cooking time, you can have a quick and simple snack the whole family will love. Feel free to use whatever filler ingredients you have left over, however I highly recommend adding the Parmesan cheese for that extra zing! This recipe makes about 8 pancake sized fritters.

Your Kids Will Love Them:

My kids love fritters made with the left over boiled vegetables and Parmesan cheese. Served cold they're great in the school lunch box. Kind of like cold bubble & squeak.

Ingredients:
  • 1 x cup of Self Raising Flour (gluten free)
  • 1 x cup of milk
  • 2 x small eggs
  • 1 x cup of chopped ham
  • 1 x cup of fresh Parmesan cheese
  • 1/2 a teaspoon of salt

Method:

  • Place Flour, Milk and Eggs ingredients in a bowl and beat with an whisk for 3 minutes until a smooth runny batter consistency is achieved.
  • Add the ham, cheese, and salt and mix through for a further minute.
  • Heat 2 fry pans to a medium heat and spray each with olive oil each time before adding the batter. Don't skip this step otherwise the cheese with stick.
  • They are ready to flip when the face up side is bubbled and dried out.
  • Allow the other side a minute or so to brown the turn them out on to a plate.
  • I'm lazy and make large pancake sized fritters and then cut them in to quarters. Alternatively, spoon smaller amounts of batter to make smaller fritters.
  • Serve hot or cold. Chances are your kids will love them.
